Ingredients:

  • 1.5 lb cooked tater tots
  • 8 large eggs
  • 1 ¼ cup Colby Jack cheese
  • 1/3 cup crumbled bacon
  • 1 tsp salt
  • 1 tsp pepper
  • Green onion to garnish

How to Make Breakfast Bites

  • Preheat the oven to 350 degrees.
  • Divide the tater tots evenly throughout a large muffin pan. Using a glass, press down the tater tots so that they squish together and form a “crust” around the sides of the muffin pan.
  • In a medium-sized mixing bowl, whisk together the eggs, cheese, and half of the bacon until the eggs are fully beaten.
  • Pour the egg mixture evenly over the tater tots and top with the remaining bacon. Place the muffin pan in the oven and allow the breakfast bites to cook for 14 minutes.
  • Garnish with green onion, serve, and enjoy!

How do you keep breakfast bites from sticking to the muffin pan?

I’ve never had a problem with these breakfast bites sticking to my muffin tin. Try greasing the cups of your pan with a little butter or olive oil before adding your potatoes.

Why are my breakfast bites rubbery?

Don’t overcook. Use a cooking thermometer to insert in your egg bites. Your breakfast bites are done when they reach a temperature of 165F.

Should I add milk or water to my breakfast bites?

The egg portion of these breakfast bites does tend to be on the dense side. If you like your eggs to be fluffier, add ¼ cup of water to your egg mixture. If you’re a fan of creamy eggs, add ¼ cup of milk or heavy cream instead.

Storage, Reheating and Serving Suggestions

One of the best things about these scrambled egg morning bites is that they’re a great make-ahead meal! Any leftover egg bites can be stored in an airtight container in the fridge for up to 2 days or in the freezer for up to 2 months. You can simply let these bites come up to room temperature on the counter or reheat them in a 350°F oven, air fryer, or microwave.

These savory and cheesy breakfast bites are great on their own or paired with your favorite sauces and garnishes. Try topping these baked egg bites with sour cream, extra cheese, crushed red pepper flakes, salsa, hot sauce, parsley, crumbled sausage, cilantro, fresh lime juice, chives, or a spicy aioli.

Expert Tips and Tricks

  • Not sure how to smash your tater tots into an even layer? I recommend using the bottom of a drinking glass, the back of a spoon, or even just your hands!
  • Be sure to thoroughly beat your eggs before layering them over the potatoes. You don’t want your breakfast bites to have chunks of egg whites in them.
  • These egg cups are easily customizable! Not a fan of bacon? Swap it out for ham, sausage, or roasted veggies. Don’t like tater tots? Make a crust out of crescent roll dough or sliced bread instead. The possibilities are endless!

    • These breakfast bites can be stored in the fridge for up to 2 days. Alternatively, you can store them in the freezer for up to 2 months. Simply reheat them in the oven at 350 degrees Fahrenheit until they are heated all the way through.
    • In addition to garnishing these bites with green onion, you can also use red pepper flakes, chives, or parsley.
    • If you like a little more spice in your breakfast, try adding a few drops of tobacco sauce to the eggs before you beat them.
