Sausage-Tortellini-Soup-Ingredients

Ingredients:

  • 1 lb ground pork sausage
  • ½ white onion, diced
  • 1 Tbsp olive oil
  • 1 ½ tsp dried oregano
  • 1 ½ tsp dried basil
  • 2 tsp garlic powder
  • 2 Tbsp all-purpose flour
  • 20 oz bag of refrigerated tortellini
  • 1 cup tomato sauce
  • 4 cups chicken broth
  • ½ cup heavy whipping cream

How to Make the Best Sausage Tortellini Soup

  • In a Dutch oven or soup pot over medium-high heat, cook the sausage.

  • Add the olive oil and onion and cook until soft and translucent.

  • Sprinkle in the oregano, basil, garlic powder, and flour. Mix to coat.

  • Add the tomato sauce, tortellini, and chicken broth. Simmer until the broth is fragrant and the pasta is warmed through.

No. Chilled tortellini will cook perfectly as this soup simmers. If you were to precook your pasta before adding it to this soup, it would be a soggy, mushy mess by the time your soup was finished cooking.

What goes with tortellini soup?

I like serving this sausage tortellini soup alongside some toasted garlic bread and a simple green salad. I also highly recommend garnishing this soup with some fresh basil and shredded parmesan cheese.

How to Store Leftover Sausage Tortellini Soup

Make sure that any leftover tortellini soup has cooled completely before you transfer it to an airtight container. This soup will stay good in the fridge for up to 5 days or in the freezer for up to 2 months. Let any frozen leftover soup thaw in the fridge overnight before reheating it in a large pot over medium heat. Heat the soup until warmed to your liking.

Ingredients

  • 1 lb ground pork sausage
  • ½ white onion, diced
  • 1 Tbsp olive oil
  • 1 ½ tsp dried oregano
  • 1 ½ tsp dried basil
  • 2 tsp garlic powder
  • 2 Tbsp all-purpose flour
  • 20 oz bag refrigerated tortellini
  • 1 cup tomato sauce
  • 4 cups chicken broth
  • ½ cup heavy whipping cream

Instructions

  1. In a large stock pot, or dutch oven, cook the pork sausage on medium high heat until cooked all the way through.
  2. Add the onion and olive oil and cook for an additional five minutes, or until the onions begin to appear translucent.
  3. Whisk in the oregano, basil, garlic powder, and flour until the sausage and onions are evenly coated.
  4. Add the tomato sauce, tortellini, and chicken broth. Stir until just combined and simmer for 15 minutes.
  5. Whisk in the heavy cream, serve, and enjoy!

Notes

  • This soup is great topped with some parmesan cheese and fresh basil.
  • You can store this soup for up to 5 days in the fridge in an airtight container.
  • You can use any brand of store-bought tortellini in this recipe. For the photos, I used Rana tortellini. You can also use frozen tortellini, but you may need to allow to soup to simmer a little bit longer to allow the tortellini to cook all the way through.
  • If you want to add some extra cheesiness to this soup, you can add a cup of grated parmesan when you whisk in the heavy cream.
