I love simple meals with high end flavor! This cheesy gnocchi with arugula is just that! It combines simple flavors in a light creamy sauce that literally makes the gnocchi melt in your mouth. This dish is perfection in a bowl. Sure you can make your own homemade Gnocchi, but I prefer to pick up premade gnocchi at the grocery store and have this dish ready to enjoy in less than 30 minutes. Serve this to your dinner guests to wow them with the flavor that is packed into this perfect meal.

Ingredients :

2 tbsp olive oil
1 onion finely chopped
4 garlic cloves finely chopped
2 tbsp flour
2 cups milk
500 g store bought gnocchi
3/4 cup grated Parmesan cheese
2 cups arugula

How to Make Cheesy Gnocchi with Arugula

  1. In a pot of boiling salted water, cook the gnocchi 2 to 3 minutes, until the
    gnocchi come to the surface. Drain.
  2. In a saucepan, over medium heat add the olive oil and cook the gnocchi, 2 to 3 minutes, until lightly browned. Transfer the gnocchi to a plate.
  3. In the same saucepan, cook the onion and garlic for 2 minutes. Sprinkle with flour and cook for 30 seconds, stirring constantly.
  4. Gradually whisk in the milk and bring to a boil. Stir in cheese and heat until
    melted.
  5. Add the gnocchi and arugula. Season with salt and pepper and stir.

Tips Tricks and FAQs

● If you prefer you can substitute spinach for the arugula.
● When buying gnocchi you want to buy the freshest gnocchi that you can find. Grocery stores will carry this in the fresh section or you can pick it up at an Italian grocery store.
● You can easily add chicken to this dish if you would like to add a protein. Just use an already cooked chicken and mix it in when you stir in the salt and pepper.

Storage

You will want to store your leftovers in the fridge in an airtight container for up to 4 days.

Reheating

If you have leftovers, reheat individual portions in the microwave in 30 second intervals stirring in between.

Can you freeze Cheesy Gnocchi and Arugula?

I do not recommend freezing your leftovers. The Gnocchi will become mushy and the texture of this dish will be altered when frozen.
