Slow Cooker Roast Beef

Slow Cooker Roast Beef is the perfect Sunday meal! It is so easy to make and is a one-pot meal that takes minimal effort! Just set it in the morning and have a hearty dinner ready to serve that night.

On Sundays, I love to make hearty comfort dinners that don’t take a lot of time! This leaves more time for relaxing and enjoying the ones I love! That is one of the many reasons why I love this slow cooker roast beef recipe. With just about 15 minutes of prep in the morning, you will be able to enjoy a delicious flavorful meal that night!  Slow-Cooker-Roast-Beef-Ingredients

Ingredients:

  • 2 lb beef roast – rump, sirloin, or chuck are the ones I like to use
  • 6 small potatoes
  • 2 cups baby carrots or sliced carrots
  • 2 stalks celery
  • 5 cubes of beef bouillon
  • Salt and pepper 
  • 2 cups water

How to Make Slow Cooker Roast Beef

  1. Remove the roast from the packaging and set it in the bottom of the slow cooker pot.
  2. Sprinkle salt and pepper on the roast. 
  3. Add bouillon and carrots.
  4. Rinse and chop celery, then add to pot.
  5. Pour in 2 cups of water.
  6. Cook on high for 4 hours or low for 6-8 hours. *Note that it is most tender when cooked on low
  7. Peel, rinse, and cut potatoes into 2-inch chunks, then add to the slow cooker 45 minutes before its scheduled time to finish cooking.
  8. To serve, remove the roast and veggies from the slow cooker. Slice the roast.

Tips Tricks and FAQs

  • I like to sear my meat to add even more flavor. If you choose to do this you will add olive oil to your pan and sear each of the sides of the meat until browned. Once this is done, add it to your slow cooker along with all the other ingredients. 
  • As long as your crockpot is big enough, you can add in more carrots and potatoes if you prefer. 
  • The liquid the roast cooks in is so flavorful. It makes for the perfect gravy. Serve as is or mix in a cornstarch and water paste to thicken it within the last 30 minutes of cooking. 
  • Be sure to check your meat’s temperature prior to removing it from your slow cooker. The internal temperature needs to be at least 131 degrees Fahrenheit for medium-rare.  Medium well is 149 Fahrenheit degrees and well done is 158 degrees Fahrenheit.

Storage

Your roast beef will keep in the fridge for up to 4 days when stored in an airtight container.

I prefer using a rump roast, sirloin, or chuck when doing a slow cooker roast beef.
