What is gumbo?

Gumbo is a savory stew that usually has a variety of different meats and vegetables.

What is chorizo?

Chorizo is very popular in Mexican and Spanish cooking. It is a pork sausage that is really seasoned. Typically it is pork, but there is beef as well. 

Mexican chorizo is uncooked and Spanish Chorizo is dried and cured. You will want to use Mexican chorizo for this recipe. 

 Slow-Cooker-Chicken-Chorizo-Ingredients

Ingredients:

1 teaspoon olive oil

6 pieces of chicken, tenderloins 

8 oz chorizo 

yellow onion, chopped 

red bell pepper, chopped 

green bell pepper, chopped 

rib of celery, chopped 

1 tablespoon garlic, minced 

1 tablespoon flour 

2 cups chicken broth 

1 can of diced tomatoes 

1 teaspoon dry thyme 

Pinch cayenne 

⅓ cup rice 

2 cups frozen or fresh corn 

2 cups frozen or fresh okra 

How to Make Slow Cooker Chicken & Chorizo Gumbo 

  • Brown chicken in olive oil, remove from skillet and place in the slow cooker 
  • In the same skillet cook chorizo with onion, bell peppers, celery, and garlic for about 4 minutes 
  • Next, stir in flour, chicken broth, tomatoes, thyme, and cayenne and pour into cooker over chicken 
  • Cook on low for 4-5 hours 
  • Stir in okra, corn, rice and cook for an additional hour  
  • Garnish with parsley, serve and enjoy! 

Tips Tricks and FAQs

  • While this recipe calls for chicken tenderloins you can use chicken thighs as well. This will add even more flavor to the recipe. 
  • You can omit the okra if you prefer. 
  • If you want to cook this faster you can cook it on high.

Storage

You will want to store your leftover slow cooker chicken and chorizo gumbo in the fridge in an airtight container for up to 4 days. 

Freezer

This recipe does freeze well. Freeze this in an airtight container for up to 2 months. Thaw it overnight in the fridge. You can warm it back up using your crockpot or on the stove.
