Grilled Shrimp Salad is a delicious and healthy lunch or dinner option. It is an easy meal to prepare and full of crunchy vegetables and succulent grilled shrimp. Paired with our homemade lime dressing, this salad makes for a balanced meal that is sure to please any palate.

Enjoy the taste of summer all year round with this light and refreshing grilled shrimp salad. The flavors of the freshly grilled shrimp and the fresh vegetables all come together in one tasty dish. What equipment do I need to make Grilled Shrimp Salad?

Ingredients:

1 tablespoon chili or grilled seasoning

3 tablespoons olive oil

2 cloves garlic minced or grated

Juice from ½ lime

1 pound uncooked, large shrimp, peeled, & deveined

Head of romaine lettuce

1 small can of corn (8-11 ounces)

¼ English cucumber, sliced

Red onion slices

1 avocado, sliced 

4 ounces of Cotija cheese 

Cilantro 

Lime wedges (optional)

**Favorite salad dressing or our homemade lime vinaigrette

How To Make Grilled Shrimp Salad

Whisk together seasoning, oil, garlic, and lime juice in a large bowl.  Add shrimp and stir to coat.

Thread shrimp onto wooden skewers if desired.  Tails can be removed before or after cooking.  Heat grill pan or BBQ to medium heat and cook shrimp for about 3 minutes on each side.  You’ll know they are done when they are opaque and start to turn pink.  

Chop lettuce and place in a large bowl.  Add corn, cucumber, red onion, and avocado slices, then top with shrimp.  Add cotija cheese, cilantro, a squeeze of lime juice, and your favorite salad dressing.  

**Try with homemade lime vinaigrette:

1 tablespoon Dijon mustard

Juice of half a lime

¼ cup olive oil

1 teaspoon finely chopped cilantro

Storage

To store grilled shrimp salad, begin by cooling the shrimp down to room temperature. Once cooled, place the shrimp in an airtight container and cover it with a damp paper towel. Store the salad in an airtight container or a covered bowl. The salad may be refrigerated for up to two days. When it is time to eat the salad, take it out of the fridge about 30 minutes before serving. Enjoy!

Tips and Tricks

1. Marinate the shrimp in a citrus-based marinade for at least an hour before cooking to add flavor and moisture.

2. When grilling the shrimp, be sure to oil the grill grate to prevent sticking. Also, cook the shrimp over medium-high heat for about 2 minutes per side, or until they are just cooked through.

3. To assemble the salad, mix together chopped romaine lettuce, cherry tomatoes, cucumber slices, feta cheese, olive oil, and freshly squeezed lime juice in a large bowl. Add in your grilled shrimp and toss everything together to combine.

4. Serve with homemade garlic croutons and extra olive oil or balsamic vinegar if desired.

5. For an added twist of flavor try drizzling a bit of hot sauce over your salad before serving!

6. I like large shrimp since they will shrink a little.  You can purchase shrimp with or without the tails, already peeled and deveined.  This will be a big time saver.  

7. If you want to marinade for any length of time, just leave out the lime juice until you’re ready to cook.

8. There are a few ways you can cook shrimp.  If cooking on an outdoor grill you will need to put them on skewers or use a grill basket made for the barbeque.  If cooking on the outdoor grill, soak wood skewers in water for 10 minutes before adding shrimp to prevent them from burning.  You can also use metal skewers.  To cook inside, use a stovetop grill pan with or without the skewers.   No matter the method, shrimp cook fast, about 3-4 minutes on each side.  Overcooked shrimp can be rubbery, so don’t overcook.
