Apple Crisp Mini Cheesecakes

Apple Crisp Mini Cheesecakes are the perfect fall treat as it combines a delicious crust with a creamy cheesecake filling that is topped with a delicious apple topping with a streusel crumb topping. Once you make these, it will be your favorite apple dessert of the season.

Apple season is here, and I couldn’t be more excited! One of my favorite desserts to make this time of year are these apple crisp mini cheesecakes. They are so easy to make and filled with all the flavors of the season that you love that pair perfectly with cheesecake. This is the perfect dessert to enjoy on a nice crisp fall night, to take to a fall gathering with friends, or as a great Thanksgiving Dessert idea

Ingredients:

 Apple-Crisp-Mini-Cheesecakes-Ingredients
  • The base:
  • Biscuit crumbs ¾ cup
  • Sugar 1.5 tbsp
  • Cinnamon 0.5 tsp
  • Melted butter 3 tbsp
  • Cream filling:
  • Cream cheese 2 cup
  • Sugar 6 tbsp
  • Vanilla 1.5 tsp
  • Flour 2 tsp
  • Egg 1 
  • Apple topping:
  • Apple 2 
  • Lemon juice 2 tsp
  • Cinnamon 1.5 tsp
  • Nutmeg ¼ tsp
  • Sugar 2 tbsp
  • Cornstarch 1.5 tsp
  • Topping:
  • Flour 1/3 cup
  • Sugar 1/3 cup
  • Oatmeal 1/3 cup
  • Cinnamon ¾ tsp
  • Nutmeg 1/8 tsp
  • Melted butter 2.5 tbsp

How to Make Apple Crisp Mini Cheesecakes

  1. Prepare all ingredients. 
  2. Mix everything for the base.
  3. Use the paper cups in the silicone cupcake mold. 
  1. Mix all ingredients for a creamy filling.
  2. Add the next layer.
  1. Mix all ingredients for the apple filling.
  2. It will be the next layer.  lightly press. 
  1. Mix all ingredients for the topping.
  2. Lay on top. Bake in a preheated oven at 180 degrees for about 30 minutes.
  1. Serve

Tips, Tricks, and FAQs

  • To make this dessert, granny smith apples work the best. 
  • You will need 2-3 apples depending on their size. 
  • Be sure to cut your apples very small to ensure that they cook all the way through. 
  • Feel free to add caramel drizzle to the top for an extra special treat. 
  • If you have any leftover filling you can place it in an airtight container in the fridge and use it for another great dish. It tastes delicious on top of cinnamon rolls. 
  • Feel free to omit the streusel if you prefer.

Storage of Apple Crisp Mini Cheesecakes

You will want to store your leftover apple crisp mini cheesecakes in the fridge, covered. These will last up to 4 days. Note that the streusel will soften as it sits in the fridge. 

Freezer

These freeze nicely. Once these have cooled, you will want to wrap them individually in plastic wrap and then place them in a freezer-safe container or wrap them in foil. These will freeze for up to 2 months.

To Thaw

To thaw your apple crisp cheesecakes you will want to place them in the fridge overnight until they are thawed.
