Chocolate Caramel Cookies are one of a kind delicious! These chocolate chip cookies are topped with the most perfect layer of caramel and then topped with melted chocolate. Once you try these, you won’t want to enjoy a chocolate chip cookie any other way!

Do you know when you find the most perfect cookie recipe that satisfies all your cravings? That is how I feel about this chocolate caramel cookie recipe. It is soft and delicious and loaded with chocolate chips that are then layered with melted caramel and then more melted chocolate. It is like heaven on Earth. 

Once you make this chocolate caramel cookie it will be the only one you will ever want to make, except maybe for our chocolate mint cookies

Ingredients:

1 cup flour

½ tsp baking soda

⅓ cup butter

½ cup brown sugar

¼ cup white sugar

1 egg

1 tsp vanilla

½ cup chocolate chips

Topping:

12 soft caramels

1 Tbsp cream

¼ cup chocolate chips

1 tsp coconut oil (optional)

How to Make Chocolate Caramel Cookies

  1. Cream together butter and sugar in a medium bowl.
  2. Add egg and vanilla and mix well.
  3. Add flour and baking soda and combine until a soft dough forms.
  4. Fold in chocolate chips.
  5. Drop 8-10 large scoops of dough onto a parchment paper-lined baking sheet.
  6. Bake at 350 for 12 minutes.
  1. Unwrap the caramels, and combine with cream in a microwave-safe bowl.  
  2. Heat at 15-second intervals, stirring until the caramel is melted.
  3. Place 1 Tbsp of caramel onto each cookie, swirling into a circle.
  4. Place the chocolate chips and oil in a microwave-safe bowl and heat at 15-second intervals until melted.
  5. Add 1 Tbsp of chocolate onto the caramel, swirling into a circle.

Tips Tricks and FAQs

  • You can easily double this cookie recipe. 
  • Use your favorite brand of chocolate chips. 
  • You can add caramel pieces to the dough if you prefer. 
  • You will want to use room-temperature ingredients when making your cookie dough. 

Storage

Let your chocolate chip caramel cookies completely cool before storing. You will want to store these in an airtight container. Separate each layer with a piece of parchment paper. These will keep for up to 1 week.

Can you freeze these chocolate caramel cookies?

Yes, you can freeze these cookies. 

Before baking: If you want to freeze these cookies prior to baking, scoop the dough onto a tray lined with parchment paper and place them in the freezer. Once frozen, add them to a freezer-safe bag for up to 3 months. 

When you are ready to enjoy, thaw your desired amount and bake.

After baking: If you prefer to bake these and then freeze them, let them completely cool. Once cooled, place on a baking sheet lined with parchment and place in the freezer. Once frozen, place them in a freezer-safe bag. 

Remove the desired amount and thaw.
